Asian Chicken Wrap

My husband and I love this easy slow cooker recipe!

24 oz ground chicken, thawed (we use ground Turkey)
3 cloves garlic, minced
1 red bell pepper, topped, deseeded and diced
1/2 cup yellow onion, finely chopped
3/4 Tbsp ginger, grated
1/2 + 1/8 cup hoisin sauce, 1/2 cup in raw chicken & 1/8 cup after cooked
1 Tbsp rice wine vinegar or white vinegar, divided
1 1/2 Tbsp toasted sesame oil, divided into thirds
2 Tbsp soy sauce, divided
1/2-3/4 Tbsp fish sauce
1 head Bibb or Butter lettuce or 1/2 head cabbage leaves
3 scallions, diagonally sliced
Dash sesame seeds, to garnish
1 container mung beans
Sriracha, to garnish as desired

In a slow cooker add, chicken, garlic, red bell pepper, onion, ginger, hoisin, 1/2 vinegar, 2/3 of the sesame oil, 1/2 of the soy, and fish sauce. Stir to combine, secure the lid on and set to cook for about 2 hours on low.
While the chicken is cooking, rinse lettuce or cabbage, dry very well, and carefully tear off and remove individual leaves.
Once chicken is cooked through, stir with a wooden spoon then drain excess liquids in a colander. Add chicken back to the slow cooker with remaining hoisin, soy, sesame oil, and vinegar. Stir to combine and scoop out onto a large serving plate.
Garnish with scallions and sesame seeds. Serve lettuce cups on a separate family style serving platter with mung beans and sriracha.

I found this recipe when I started the Whole 30.  My husband is super picky and I wasn’t sure if he would like it.  I mean meat wrapped in lettuce.  He tried it and was shocked at how much he loved it!  The flavors are amazing together!  I usually serve this when I know we will have several people over.  B’s guy friends love it as well and are always excited when they hear we are having “those Asian wraps”.

Tip: I keep Ginger in the Freezer so I don’t have to purchase it each time.  Also, other than Hoisin Sauce I only have to purchase the other ingredients every 5-6 time I make this meal (and of course the meat).  So it’s perfect to throw together in a pinch.  It takes about 2 hours to cook, which is nice.  Most slow cooker meals take longer making them more of a plan ahead type meal.
