Blueberry Muffins

I love baking!  Especially on Sunday.  I grew up with my mom meal prepping and baking on Sunday’s for the week.  It is my solace.  I pick a movie and roll up my sleeves to make something amazing for the week.  Lately Blueberry Muffins from scratch are my favorite.  This recipe is one I got from my amazing sister.  The muffins are moist and perfectly made!

I come from a long line of strong women!  My Great Grandmother was a tobacco farmer and had 4 children.  My Grandmother knew her own mind and went to college to become a nurse, she worked my mother’s whole life from 7pm to 7am 6 days a week.  My Mother is a strong independent woman who worked at the local electric company in order to pay for the college she wanted to attend.  Despite all three women working they also created amazing meals for their families.  Each baking and cooking up a storm on Sunday.  Preparation for the week was crucial to feeding everyone.  Where I do not have a big family (no children), I still bake and cook on Sunday to prepare for the week.
My Sunday baking usually consists of Muffins.  I am hoping to try making breads this summer.  The cooking is either a roast or big dish like spaghetti.  I want meals that I can easily grab for lunch and we will eat for at least 1 or 2 dinners.  My wonderful husband has a thing with eating food after 48 hours, as in he won’t eat it.  So what I cook is more for lunches, but will feed us for at least 1 dinner.  Anyone else have a picky eater like this in your home?
Anyhow, I had been buying muffin mix at the grocery store.  While on the phone with my sister the other weekend she said she would send me her recipe and that I needed to stop buying pre-made muffin mix.  I was happy to try a recipe that would be a guaranteed success!  These muffins are amazing!  The top is a little stiff but not hard.  The innards are so soft and moist!  I can’t wait to make these with strawberries, and raspberries!  I tend to purchase frozen fruit for my muffins.  The blueberries I used were Trader Joe’s frozen blue berries!  They baked up so nicely!
