Fig and Avocado Grilled Cheese

I love a good grilled sandwich.  When I picked up these fresh figs in the grocery store I was baffled as to how I would use them.

Have you ever stood in a grocery store and searched your phone for a recipe or meal idea because you found something fun?  Well I do this all the time.  I saw these fresh figs and was like yum, but how can I eat them in a meal?  So I searched and found this site and recipe.  She covers some great options to do with Figs.  So I decided to try the Grilled Cheese with Avocado and Fig. OMG it was so good.  I added a homemade broccoli salad to it for dinner one night.
Fig an Avocado Grilled Cheese

Ingredients:
Fresh Figs – 2
Avocado
Bread – suggest Sourdough but I used sandwich bread
Light cheese – I used Provalone

 

Directions:
Put butter in a pan on medium heat.
Cut up Avocado an Fig, layer on bread.  Add Cheese and put directly in pan on top of butter.
I put Cheese side down first to make sure the cheese melted.

Broccoli Salad

Ingredients:
Broccoli
Mayonnaise – I prefer Duke’s
Ranch Dressing
Cheddar Cheese
Onion
Grapes

Directions:
Cut up Broccoli into desired size bites.  Dice up Onion, and slice Grapes in half.
Put approx 2 tablespoons of Mayo in bowl and add desired Ranch, stir together.
Add Broccoli and mix well with Mayo & Ranch.
Add onion and grapes, stir.
Top off with Cheese and serve.  You can chill this in the fridge if you are serving later.

This Broccoli Salad is the easiest recipe I have and I love that I can mix it up in a jiff.  Sometimes I add Bacon or Cauliflower.  For this meal I wanted my broccoli salad to be a little more simple since the sandwich had so much flavor.  The mix of the Avocado and Figs were amazing!  They blended for a great spin on the Grilled Cheese sandwich.  I will be eating this again very soon, especially with Fig season soon.
