Light Summer Salad

I love to make light salads for the summer.  Lately we have been loving fresh radishes!  So naturally I decided to make a salad around them.  I looked on Pinterest and found a corn based salad that had radishes.  I added items we love, like dead less cucumbers and onion.  With so many flavors I didn’t want a heavy sauce.  Lime juice and dill brought all the flavors together.

4 Radishes
1 can corn
1 cucumber
1/2 cup diced onion
1/2 Lime
1 tsp Dill

Dice and mix together.  Serve right away or chill until ready to serve.
This salad goes so well with seafood.  I served this with Scallops and Shrimp for our Mother’s Day dinner.  Scallops are my Mom’s favorite!

The best part about a simple salad like this, is you can throw it together last minute.  I purchased the onion and radishes from the local Farmer’s Market.
