Smorgasbord

Recently Our mail carrier delivered a magazine to my mailbox, bon appetit.  It goes without saying the magazine was meant for a different mailbox. Not to look a gift horse in the mouth I looked through the many recipes and found this  it goes without saying teen magazine was meant for a different mailbox. Not one to look a gift horse in the mouth, I looked through the many recipes and found this one.  Smoked salmon, cream cheese, and cucumber; I’m in!

Ingredients:

Sourdough Bread
Smoked Salmon
Cream Cheese
Capers
Cucumber
Dill

Toast Bread, I did mine under the broiler with butter.  Spread cream cheese, top with Salmon, Cucumber, Capers, and Dill.  An item in the recipe I forgot that would be a good addition is hard boiled egg sliced.  Of course you will need to eat this with fork and knife!  I had this for dinner the other night and will eat it again for lunch or dinner.  It’s a filling and yet a light meal!

There were a few other options like roast beef with mustard, and roasted crispy onion.  Or fried fish with caviar, lemon, asparagus, and dill.

Do you have a light summer meal you love?
